Biscuit Belly continues its national expansion following the success of the brand in new marketsLouisville, Kentucky ( Belly Cookie, a Kentucky-based “craftsman casual” brunch restaurant that offers warm hospitality and chef-led gourmet breakfast cookie sandwiches, continues its national expansion through franchising, after announcing developments in the markets from Georgia and Alabama. The brand seeks to provide a superior brunch experience where guests can come together for a delicious take on familiar Southern favorites, with the cookie sandwich being the star.

Founded by Lauren and Chad Coulter in 2019 and franchised since 2020, Biscuit Belly has become a staple in their home state of Kentucky. Known for its chef-inspired offerings, which revolve around a homemade cookie, innovative alcoholic beverages and a bright, modern environment, Biscuit Belly was an instant favorite among brunch-goers.

“Our love for a great brunch and Southern flavors is the origin of the Biscuit Belly dream,” said Lauren Coulter, Director of Franchise and Development. “My husband and I loved being able to connect with our family and friends over brunch. It was a time for us to relax and get together over a meal and a few drinks, but we felt like we would never find a place to call home. We set out to create our own brunch restaurant that brought together our love of Southern staples with a warm, welcoming and cohesive experience – and that’s what we created with Biscuit Belly.

Biscuit Belly has found rapid success locally and is eager to continue its expansion in North America, focusing on the South and Midwest. With plans to open at least seven locations by the end of 2022, the brand has remained a favorite with Kentucky locals and is now bringing its unique brunch concept to new markets with its new location (and its first franchise location) opened in Lexington, Kentucky. and another franchise location is slated to open soon in Acworth, Georgia. With no slowdown plans, the brand’s goal is to have 15 more locations in development by the end of the year, bringing their total in development to 35 stores.

“Biscuit Belly serves more than delicious Southern cuisine to brunch lovers, we provide a place where people come together and create memories over a delicious meal in a ‘causal artisan’ setting,” said Chad Coulter, founder and CEO of Biscuit Ventre. “We believe in true Southern hospitality and providing a space where everyone feels welcome and leaves our restaurant eager to return for more. We are thrilled with the rapid momentum we have seen in the national expansion of our brand as we enter new markets and are thrilled to find franchisees who share our passion for providing a better brunch experience to communities across America.

Biscuit Belly currently has five locations open and 20 more locations in development. Including franchise fees, the initial investment for a Biscuit Belly franchise is between $697,000 and $1,102,000. For more information on Biscuit Belly franchise opportunities, please visit
